Sweet and Spicy Pork
In a chicken rut? Believe it or not, pork loin is also an extremely lean, and delicious source of protein. This skillet pork with peaches is sweet, a little spicy, and perfect!

Ingredients
4 center cut pork loin chops
1 red onion (20 grams) chopped
1 can of sliced peaches in juice, rinsed and drained
1/2 teaspoon red pepper flakes – less if you’re sensitive to heat!
1/2 cup chicken broth
2 tablespoons apple cider vinegar
1 teaspoon cornstarch
salt to taste
Instructions
Preheat a skillet to medium-high heat.
Season your pork with salt and pepper on either side.
Spray pan with cooking spray, and add pork to your pan. Brown on the first side for 5 minutes until golden and flip.
Add your red onions to the pan, stir, and turn the heat down to medium. Cook for another 5 minutes.
Add remaining ingredients, except cornstarch, to the pan, and cover. Cook for 10 minutes on medium-low.
Uncover the pan and sprinkle in the cornstarch. Stir into the pan, removing all clumps, and turn heat up to medium. Simmer for 1 minute until the sauce is thickened, then remove the pan from the heat.
Season with salt and pepper to taste, and serve!
