Ingredients

  • 4 center cut pork loin chops

  • 1 red onion (20 grams) chopped

  • 1 can of sliced peaches in juice, rinsed and drained

  • 1/2 teaspoon red pepper flakes – less if you’re sensitive to heat!

  • 1/2 cup chicken broth

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon cornstarch

  • salt to taste

Instructions

  1. Preheat a skillet to medium-high heat.

  2. Season your pork with salt and pepper on either side.

  3. Spray pan with cooking spray, and add pork to your pan. Brown on the first side for 5 minutes until golden and flip.

  4. Add your red onions to the pan, stir, and turn the heat down to medium. Cook for another 5 minutes.

  5. Add remaining ingredients, except cornstarch, to the pan, and cover. Cook for 10 minutes on medium-low.

  6. Uncover the pan and sprinkle in the cornstarch. Stir into the pan, removing all clumps, and turn heat up to medium. Simmer for 1 minute until the sauce is thickened, then remove the pan from the heat.

  7. Season with salt and pepper to taste, and serve!
