Pineapple Chicken Stir-Fry
We all love Chinese food, but the dishes from your favorite place are sometimes fried and full of sugar and can be tough to fit into your macros. This Pineapple Chicken Stir-Fry is reminiscent of sweet and sour chicken but has none of the greases and breading, so it won't leave you feeling weighed down or lethargic.
With simple ingredients and just 20 minutes, you can enjoy awesome Chinese food at home without having to pay for delivery! Serve it with white or brown rice, or caulirice, and you'll satisfy your cravings while staying on track towards your goals.

Ingredients
20 ounces raw chicken breast, chopped into chunks (about 2 large breasts)
100 grams chopped yellow onion (about half a medium)
150 grams chopped bell pepper (1 medium)
1/4 teaspoon salt
1/4 cup Thai sweet chili sauce (Thai Kitchen brand)*
2 tablespoons soy sauce
1 teaspoon cornstarch
1/4 cup chicken broth
1/2 teaspoon minced fresh garlic
150 grams chopped fresh pineapple (about 1 cup)
Handful chopped scallion (optional)
Non-stick cooking spray
Instructions
Chop up chicken, bell pepper, onion, pineapple, and scallions.
Heat a large non-stick skillet to medium heat, and spray with cooking spray. Add your chicken, bell pepper, and onions.
Cook for 7-10 minutes, until chicken is browned and mostly cooked through.
While this is cooking, combine your sweet chili sauce, soy sauce, chicken broth, cornstarch, and garlic in a small bowl. Whisk until smooth.
Add the sauce to your skillet, and turn the heat up to medium-high.
Allow the dish to simmer for 2-3 minutes until the sauce has thickened.
Reduce the heat to low, add your pineapple and toss to combine.
