Healthy Peach Cobbler
While chocolate and froyo always be in season, summer is the perfect time for peach cobblers. This healthy Peach Cobbler is a much lighter and healthier version of a classic, but judging by the amazing taste, you'd never be able to tell.
Serve this with ice cream for an amazing dessert, eat it as a sweet snack, or even have some with nuts and yogurt for breakfast!

Ingredients
5 peaches, either fresh or canned in juice
2 teaspoons cornstarch
1/2 teaspoon cinnamon
1 tablespoon granulated stevia (or two packets no-calorie sweetener)
1 egg
1/4 cup liquid egg whites
1/4 cup unsweetened almond or cashew milk
1/2 teaspoon pure vanilla extract
2 tablespoons light butter, melted
1/4 cup non-fat plain Greek yogurt
1 tablespoon dark brown sugar
16 grams sugar-free vanilla pudding mix
5 tablespoons oat flour
pinch of salt
2 tablespoons granulated stevia (or 3 packets no-calorie sweetener)
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
Instructions
Preheat the oven to 350 degrees.
Cut peaches into slices, and add cornstarch, cinnamon, and stevia. Mix to combine and set aside.
To a large bowl, add your egg, egg whites, milk, vanilla, butter, yogurt, and brown sugar. Mix using a whisk until smooth and well combined.
To that same bowl, add remaining ingredients, and combine using a whisk or spatula until clump free.
Spray an 8×8 baking dish with cooking spray. Add your peaches, then top with the cobbler batter evenly.
Bake for 40-45 minutes until cobbler has set.
Allow to cool for 5-10 minutes, then serve!
