Hawaiian Fried Rice
The amazingly sweet and salty combo of pineapple and ham should not be restricted to just pizza. This Hawaiian Fried "Rice" utilizes cauliflower for the rice base, making it low in carbs and high in fiber, while classic Asian flavors give it amazing fried rice taste.
Even on weekday nights, this comforting, flavorful dish will make you feel like you're eating dinner in the tropics!

Ingredients
1 large head of cauliflower, grated (3 1/2 cups grated cauliflower)
100 grams yellow onion, chopped (about half an onion)
6 ounces diced ham
1/2 cup frozen peas and carrots
1 tablespoon sesame oil (could also use canola)
1 teaspoon minced garlic
1/4 teaspoon ground ginger
2 tablespoons soy sauce
1 cup diced pineapple (200 grams)
Instructions
Rice Cauliflower using a cheese grater, and set aside in a bowl. Also prep onion, ham, and pineapple. Set aside.
In a pan set on medium heat, spray with cooking spray and add raw onion. Saute for 5-10 minutes until softened. Remove from pan and set aside.
Add your diced ham to the pan on medium, and cook for 5 minutes, stirring occasionally until browned on all sides.
Add remaining ingredients besides pineapple and soy sauce to the pan. Cook for about 10 minutes until the cauliflower has softened.
Add pineapple and soy sauce to the pan, and turn the heat to medium-high. Cook until there is no liquid remaining in the pan β about 5 minutes.
Season with salt to taste, and serve!
