Ingredients

Cake

  • 15 grams egg whites (1 tablespoon)

  • 8 grams of natural cane sugar (2 teaspoons)

  • 15 grams pumpkin puree (1 tablespoon)

  • 1 1/2 tablespoons unsweetened cashew milk

  • 1 tablespoon granulated stevia (or 1-2 stevia packets)

  • 1/2 teaspoon pumpkin pie spice

  • 1/4 teaspoon baking powder

  • 12 grams - PEScience Chocolate Cupcake protein powder

  • 5 grams unsweetened cocoa powder (1 tablespoon)

  • 15 grams white whole wheat flour (2 tablespoons)

  • pinch salt

  • 5 grams mini chocolate chips (1 teaspoon)

Syrup

  • 15 grams egg whites (1 tablespoon)

  • 8 grams of natural cane sugar (2 teaspoons)

  • 30 grams sugar-free syrup (2 tablespoons)

Instructions

  1. In a bowl, whisk together first 7 ingredients, from egg whites to baking powder.

  2. Add the cocoa and protein powder, and mix again.

  3. Now mix in the flour until it is just combined. Over mixing will make the cake gummy.

  4. Spray a small microwavable bowl with cooking spray, and add your batter.

  5. Top with chocolate chips, and microwave for 1:00 - 1:15.

  6. Allow to cool for a few minutes and enjoy!
