Sweet Potato, Goat Cheese, and Bacon Frittata
This frittata is a super delicious meal that is perfect for both meal prep and for a healthy weekend brunch. The sweetness from the sweet potato, salt and smoky flavor from the bacon, and a fantastic creamy tang from the goat cheese combine to make the perfect flavor combination. You can't beat the macros, and with only 5 ingredients, it couldn't be simpler either!

Ingredients
5 slices reduced fat bacon (normal bacon would work as well)
300 grams of sweet potato
1/2 cup crumbled goat cheese
3 cups egg beaters
1/2 teaspoon salt
Instructions
Preheat your oven to 425 degrees F.
Heat an oven proof skillet to medium-low.
Poke a few holes in your sweet potato using a fork, and microwave for 1 minute. Dice into small chunks.
Spray your skillet with cooking spray, and add the sweet potato. Cook until tender and golden on the outside β about 5-10 minutes. Remove from the pan and set aside in a bowl.
Add your bacon to the pan. Cook 2 minutes until golden brown on one side, then flip and cook the other side until crispy.
Remove the bacon from the pan, and drain all the grease from the pan. Using a knife or your fingers, crumble into pieces and add to the sweet potato bowl.
To the bowl, add your goat cheese, egg beaters, and salt, and mix to combine.
Spray your pan one more time to ensure that nothing sticks, and add your frittata mixture. Cook on the stove top, undisturbed, for about 5 minutes until the edges set.
Move your skillet to the oven, and cook for 10-15 minutes until firm to the touch.
Allow to cool, then cut into 5 pieces and enjoy!
