Peanut Butter and Jelly Thumbprint Cookies

No matter how old you get, there's nothing quite as comforting or satisfying as a peanut butter and jelly sandwich. These cookies have all the flavors of a classic pb&j, without all the macros.

You'll have a hard time only eating one, but with only 9 grams of carbs and less than 80 calories per serving, you can enjoy multiple!

Ingredients

  • 1 egg

  • 1/4 cup honey

  • 1/4 cup unsweetened applesauce

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 1/2 cup smooth peanut butter

  • 3/4 cups powdered peanut butter (pb2)

  • 3 tablespoon sugar-free jelly (strawberry is used here)

Instructions

  1. Add your egg, honey, applesauce, vanilla, and salt to a medium bowl. Whisk until smooth.

  2. Add peanut butter and whisk until smooth again.

  3. Add powdered peanut butter and incorporate using a spatula until thick batter forms.

  4. Cover the bowl with plastic wrap and refrigerate for 1 hour.

  5. Preheat oven to 325 degrees F.

  6. Using a tablespoon measure, spoon cookies onto a baking pan sprayed with cooking spray. It will help to spray the tablespoon measure with cooking spray as well. You want the cookies to be round and circular.

  7. Spray the back of a 1/2 teaspoon measuring spoon with cooking spray, and create the "thumbprint" for the jelly by pressing the spoon into the middle of each cookie.

  8. Once all cookies have been pressed, bake for 25-30 minutes. To create a crispier, browner edge, you can broil for a couple minutes after they've finished baking.

  9. Allow cookies to cool for 10 minutes, then spoon about 1/2 teaspoon jelly into the center of each cookie.
